Meet The Founder
Hi, I’m My (pronounced “me”), the hands behind The Second Rise.
This little bakery project has been rising slowly in the back of my mind for a long time. After getting laid off, I finally decided it was time to try it. It’s a scary time—less income, a shaky economy, and plenty of uncertainty—but something in me said: if not now, when?
I’ve been baking for years, but my passion has really taken flight since 2019. I’ve fallen in love with the art of French pastries—Saint-Honoré, choux, entremets, tarts—and I’m constantly challenging myself with new techniques and textures. My pastries aren’t overly sweet; I love finding that balance of flavour and texture that surprises and delights with every bite.
I often gravitate toward what some might call “fancy desserts”—the kind made with luxurious ingredients like real vanilla beans, mascarpone, hazelnuts, and pistachios. I’m all about quality: I believe that when you start with beautiful, thoughtfully chosen ingredients, the result feels memorable, a little indulgent, and deeply satisfying. There’s an absolute joy in creating refined and comforting desserts.
I’m originally from Montreal, Quebec and after a few moves—including Vancouver and a quick return to Quebec—I finally settled in Calgary in early 2025. It’s been a bit of a whirlwind, but Alberta feels right. My partner and I love the outdoors, and Alberta’s wide-open spaces and access to nature perfectly fit our lifestyle.
Starting this home-based bakery has taken courage. It’s not easy to leap into something new when things feel uncertain, but this project is full of heart, and I’m so happy to share it with you. Thank you for supporting local, handmade pastries—and being part of this second rise.
